My Favorite Holiday Recipe – Summer Squash Casserole

Impress your friends with this amazing dish – it’s so good. I like to offer a veggie option during the holidays and this is the one that everyone loves and I love it too. I’ve been making it for years with butternut squash … so yes, you can experiment. I’ve made it without cheese, using different kinds of crackers, more pepper, less pepper, etc – it’s a very rich recipe that is forgiving with experimentation. Enjoy!
